Grab those onions, huns! You will need 2.5-3 lbs of them! You will also need a diverse range of liquids including chicken bone broth, white wine, balsamic vinegar, Worcestershire sauce, and honey. You can use fresh or dry thyme for this recipe, and minced garlic can work in place of the cloves.
2. Caramelize the onions
This can be tricky if you do not have experience. You will cook the sliced onions in the butter and olive oil with the garlic, salt and pepper over medium-high heat. Be sure to stir! It will help reduce the stickiness at the bottom of the pot, though it won’t eliminate it. The onions will start to brown in 10-15 minutes, and then you will add the white wine a little at a time. Scrape the bottom of the pot to loosen the onions stuck to the bottom of the pot. Keep adding wine a little bit at a time and stir until the onions are nice and golden brown, approximately 5-10 more minutes! Then add the flour to thicken it up.
3. Put it all together
Add chicken bone broth, Worcestershire sauce, balsamic vinegar, honey, thyme, and bay leaf to the pot. Bring to a boil and simmer covered on low heat for around 20-30 minutes. I recommend simmering for a few hours to let the flavors settle in to make it more rich!
4. Serve!
Dish out 1-cup servings and enjoy delicious soup that is low in calories (167 cal/cup)! The classic way to serve this soup is with a crusty ciabatta baguette and melted Gruyère cheese! If this is too fancy for you, then an old fashioned grilled cheese sandwich will do great things to your tastebuds when paired with this soup!

- Add butter and olive oil to a soup pot or dutch oven. Add the sliced onions, garlic, salt and pepper, and cook covered over medium-high heat. Stir until onions are starting to brown and caramelize, approximately 10-15 minutes.
- Reduce the heat to medium and add white wine. Cook and stir for approximate 5 more minutes. Add flour and cook for 1 more minute. Scrape the bottom of the pot with a wooden spoon to loosen the onions that stuck. If needed, add more wine to scrape the pot!
- Add chicken bone broth, Worcestershire sauce, balsamic vinegar, honey, thyme, and bay leaf to the pot. Bring to a boil and simmer covered on low heat for around 20-30 minutes.
- Remove from heat, and let cool for 10-15 minutes, then add milk and remove bay leaf. Stir well and season to taste with thyme, salt and pepper.
- Serve 1-cup servings with shredded cheese and thyme to top it off!
- Storage: Pour into airtight storage containers and keep refrigerated for up to 4 days or in the freezer for up to 3 months.
